Stratos Restaurant Group

About:
Stratos Restaurant Group

Founded in 2003, Stratos Restaurant Group is the ten year culmination of a friendship and shared vision of two young chefs.

Stratos Lambos, the son of a New York restaurateur, and Angelo Kaltsounis, the son of a Charlotte, NC, restaurant owner, met in 1994 while attending the Culinary Institute of America in Hyde Park, NY.

Fast friends, the two aspiring chefs aligned their individual skills to design a full restaurant concept for their senior project.

Awarded a perfect score, an honor only 3 of the 30 projects entered would receive, the Mediterranean restaurant concept, including specially designed menus and a detailed floor plan, was proudly displayed in the main hall of the Culinary Institute of America.

Lambos and Kaltsounis knew they had something exclusive.

Lambos chose Florida, where he would receive his business degree in hospitality management, to be followed by a stint with The Restaurant People, where he would meet his mentor Tim Petrillo.

In 2002 he moved to Atlanta to open Kyma, a Buckhead Life Group restaurant, alongside his college roommate, Pano Jr. Karatassos, son of the same named famous Atlanta restaurateur.

On the advice of the nationally acclaimed restaurateur Pano Karatassos, who advised Lambos, they began concepting a Greek and Italian mingled theme, with an open, upscale atmosphere… minus the table clothes.

Ilios Noche was born.Opening on November 28th, 2003, Ilios Noche was an immediate success.

Serving traditional Greek dishes like grilled octopus and souvlaki, and Italian staples with a twist, like their boutique pizzas, Ilios Noche's smart, casual environment and extensive menu allowed the diners to choose their dining experience.

With the opening of Ilios Noche, Frank Kaltsounis, now a decorated pastry chef for his work in Atlanta, helped the conceptual development.

Frank is a managing partner, and also Ilios' in-house pastry chef. Ilios' menu offers fresh baked breads, pastries, muffins, and scones, as well as an array of homemade ice creams.

All are made daily, with the exception of their famous pita bread, which is made twice daily to meet the high demand.

It works. Winning a bevy of Creative Loafing's "Best of" Awards, including Best Pizza, Best Restaurant, Best European Restaurant, and Best Dessert, Ilios Noche boasts a 90% loyalty base and has seen a 25-30% increase in revenue each year.

In just two years after the launch of their first restaurant, Stratos Restaurant Group unveiled Nolen Kitchen and Crescent Lounge in Myers Park in April 2006.

SRG was contracted under management agreement by Olympia Restaurant Group Inc., to re-create and fully operate their existing restaurant Kaffe Frappe.

Named for famous landscape architect John Nolen, who is credited with designing Myers Park, as well as Central Park in NYC, Nolen Kitchen features a retro-continental feel with complimentary menu and strictly American wine list.

Within six months of opening, Nolen Kitchen, having garnered glowing reviews from local critics and media, was awarded Creative Loafing's Best New Restaurant 2006.

Not to be out done, Pastry Chef Frank Kaltsounis was served with the distinction of Best Dessert in Charlotte being "where ever Chef Frank Kaltsounis is."

With Kaltsounis' delectable creations available at both Stratos Restaurant Group locations, the award was a coup for both establishments.

With the launch of their Chef Driven Catering Company in 2006, Stratos Restaurant Group is gaining momentum alongside the other Charlotte restaurant groups.

A wide variety of personalized items, including cuisines not currently available in its restaurants, are available for in-house catering, large events, or private dining in one of SRG's locations.

"We don't want just one type of restaurant," Lambos explains. "We're a multi-concept company; we're hoping to influence the community. We'd like to influence other types of restaurants in the Charlotte area."
